When it comes to cooking with fire, Marcus Bawdon is a bit of a living legend. He’s the editor of UK BBQ Mag, blogger at CountryWoodSmoke and runs the UK BBQ School from his Devon home. Marcus is happiest cooking in the great outdoors (come rain or shine) and so we were delighted to have him join us on the Cutting Room stage at Meatopia 2019 for a demo at the festival, which he’s been a fan of for years.

Marcus used to be a vegetarian, believe it or not, in the mid-90s when it was difficult to get quality meat without spending a fortune… an ethos we applaud. We too are big believers that eating meat should be about quality and responsible sourcing, and if you’re not going to do it properly, you may as well not do it at all. In this video, he talks about his passion for quality ingredients cooked over live fire, and especially the importance of resting as part of the cooking process… a step that way too many people skip when they can’t resist the lure of a beautifully grilled piece of meat.
