Samantha Evans from Wales’ legendary barbecue restaurant Hangfire did us the great honour of closing Saturday’s Cutting Room stage for us in 2019, taking us through her own journey discovering the art of barbecue. From techniques and flavours to the surrounding cultures, there’s much more to this primal craft than simply heating up food, and Samantha shares her experiences with us with all the warmth, wisdom and humour we’ve grown to love her for.
