At Meatopia 2019, we were lucky enough to be joined by Amninder Sandhu, head chef at Arth, Mumbai — India’s first ever fire-only restaurant. Not only is Amninder a multi-award winning chef and star of Netflix’s Final Table, she’s a veritable legend when it comes to fire and flavour. Here she is joining Barra Fitzgibbon on the Cutting Room stage for a Sunday session at London’s Tobacco Dock for Meatopia 2019, where she cooked a “complex and beautiful” dish exclusively for the Meatopia audience using authentic Indian spices and ingredients.

Watch her bring the dish together and talk about everything from being told you’re “not good enough”, her former life as a scientist, and Marco Pierre White’s attitude towards “emotional” female chefs, to why cooking with fire is in India’s culinary DNA.
